  • 1 egg
  • 1 cup buttermilk
  • 1/3 cup oil (vegetable or canola)
  • 1 tsp vanilla extract
  • 2 tsp ground cinnamon
  • 2 tbsp sugar (for the swirl)

  1. Preheat oven to 350°F (175°C) and grease two loaf pans.
  2. In one bowl, mix flour, baking soda, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together sugar, egg, buttermilk, oil, and vanilla.
  4. Combine wet and dry ingredients until smooth, but do not overmix.
  5. Pour half of the batter into each loaf pan.
  6. Sprinkle a generous layer of cinnamon sugar over the batter.
  7. Add remaining batter, top with more cinnamon sugar, and gently swirl with a knife.
  8. Bake for 50–60 minutes, or until a toothpick comes out clean.
  9. Cool in pans for 10 minutes, then transfer to a wire rack to finish cooling.

Notes

Use a homemade buttermilk substitute if needed by mixing 1 tbsp vinegar or lemon juice into 1 cup milk and letting it sit 5–10 minutes.
