Ingredients
Scale
- 1/2 cup (1 stick) unsalted butter
- 2 1/2 cups all-purpose flour
- 1 tablespoon granulated sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 2 cups cold real buttermilk
Instructions
- Step 1: Preheat your oven to 450°F (230°C).
- Step 2: Place the stick of butter in an 8×8 or 9×9-inch glass or ceramic baking dish.
- Step 3: Place the dish in the oven to melt the butter until it is bubbling, being careful not to let it burn.
- Step 4: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Step 5: Gently fold the buttermilk into the dry ingredients until just combined and no dry streaks remain.
- Step 6: Pour the wet, shaggy dough directly into the center of the melted butter in the hot pan.
- Step 7: Use a knife or bench scraper to pre-cut the dough into 9 squares, allowing butter to seep into the crevices.
- Step 8: Bake for 20-25 minutes until the biscuits reach a deep amber golden brown color.
- Step 9: Let the biscuits sit for 5 minutes after baking to allow the remaining butter to be reabsorbed.
Notes
Avoid over-mixing the dough to ensure a fluffy texture. Using real buttermilk is essential for the chemical reaction that creates height and tang.
