- 2 chicken breasts, diced
- 2 medium zucchinis, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 small onion, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Step 1: Cook the chicken Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add diced chicken and cook until golden and cooked through, about 5-7 minutes. Remove from skillet and set aside.
- Step 2: Sauté aromatics — In the same skillet, add remaining tablespoon of olive oil. Sauté chopped onion and minced garlic for 2-3 minutes until fragrant and soft.
- Step 3: Cook the zucchini — Add sliced zucchini to the skillet and cook for 5-6 minutes until tender but still crisp. Stir occasionally.
- Step 4: Combine and serve — Return the cooked chicken to the skillet. Season with salt and pepper. Stir everything together and cook for an additional 2 minutes until heated through. Serve warm.
Notes
This dish is perfect for meal prep and can be stored in the refrigerator for up to 3 days. Add red pepper flakes for a spicy kick.
