Chicken and Zucchini Skillet

Simple one pan chicken and zucchini skillet recipe for quick weeknight dinners

Ingredients:

  • 2 chicken breasts, diced
  • 2 medium zucchinis, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Step 1: Cook the chicken  Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add diced chicken and cook until golden and cooked through, about 5-7 minutes. Remove from skillet and set aside.
  2. Step 2: Sauté aromatics — In the same skillet, add remaining tablespoon of olive oil. Sauté chopped onion and minced garlic for 2-3 minutes until fragrant and soft.
  3. Step 3: Cook the zucchini — Add sliced zucchini to the skillet and cook for 5-6 minutes until tender but still crisp. Stir occasionally.
  4. Step 4: Combine and serve — Return the cooked chicken to the skillet. Season with salt and pepper. Stir everything together and cook for an additional 2 minutes until heated through. Serve warm.

Notes

This dish is perfect for meal prep and can be stored in the refrigerator for up to 3 days. Add red pepper flakes for a spicy kick.
