- 1 lb large shrimp, peeled & deveined
- ½ cup flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1 cup shredded coconut
- Salt, pepper, paprika
- Oil for frying
Instructions
Step 1: Prepare the shrimp – Pat shrimp dry and season with salt and pepper.
Step 2: Coat the shrimp – Dredge in flour, dip in egg, then coat in panko + coconut mix.
Step 3: Fry – Fry at 350°F for 2–3 minutes until golden brown.
Step 4: Serve – Drain on paper towels and serve hot with chili or mango sauce.
Notes
Bake at 425°F for 12–15 minutes for a lighter version.
Use unsweetened coconut for less sweetness.
Pairs perfectly with piña colada or mango dipping sauce.
