- 1 1/2 cups granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup whole milk, room temperature
- 3 large eggs, room temperature
- 2 teaspoons pure vanilla extract
- 1/2 cup rainbow sprinkles (jimmies style)
- 1/2 cup unsalted butter (for frosting)
- 3 cups powdered sugar
- 3 tablespoons heavy cream
Instructions
- Step 1: Preheat Oven – Set oven to 350°F (175°C) and grease two 8-inch round cake pans.
- Step 2: Mix Dry Ingredients – Whisk together flour, sugar, baking powder, and salt in a large bowl.
- Step 3: Cream Butter – Beat softened butter with dry ingredients until the mixture resembles coarse crumbs.
- Step 4: Add Wet Ingredients – Mix in eggs, milk, and vanilla extract until the batter is smooth.
- Step 5: Fold Sprinkles – Gently fold in the rainbow sprinkles by hand to prevent color bleeding.
- Step 6: Bake Cakes – Divide batter into pans and bake for 30-35 minutes until a toothpick comes out clean.

- Step 8: Make Frosting – Beat butter, powdered sugar, and cream together until light and fluffy.
- Step 9: Assemble Cake – Frost the top of one layer, stack the second, and cover the exterior with frosting.
- Step 10: Final Decor – Top with extra sprinkles and serve at room temperature.
Notes
Use ‘jimmies’ (long sprinkles) rather than nonpareils (tiny balls) to ensure the colors don’t bleed into the white cake batter.
