- 2 cups unsweetened organic fruit juice (such as pomegranate or tart cherry)
- 2 tablespoons high-quality grass-fed bovine gelatin powder
- 1/2 cup cold filtered water
- 1 teaspoon liquid stevia or monk fruit sweetener (optional)
- 1/2 cup fresh berries for garnish
Instructions
- Step 1: Bloom Gelatin – Pour the cold water into a small bowl and sprinkle the gelatin powder evenly over the surface; let sit for 5 minutes until thickened.
- Step 2: Heat Juice – Pour 1 cup of the fruit juice into a saucepan and heat over medium heat until it begins to steam, but do not let it reach a boil.
- Step 3: Dissolve Gelatin – Add the bloomed gelatin to the hot juice and whisk vigorously until the gelatin is completely dissolved and no clumps remain.
- Step 4: Mix Remaining Ingredients – Remove from heat and stir in the remaining cold juice and optional natural sweetener.
- Step 5: Prepare Molds – Pour the liquid mixture into a glass baking dish or individual silicone molds.
- Step 6: Set Jello – Place in the refrigerator for at least 3 to 4 hours, or until the gelatin is completely firm and set.
- Step 7: Serve – Slice into squares and serve chilled, optionally topped with fresh berries.
Notes
Always use bovine-sourced gelatin to ensure the recipe is pig-product free and rich in glycine for digestive support.
