- 1 lb boneless chicken breasts
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup sun-dried tomatoes
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 cup spinach (optional)
Instructions
- Step 1: Sauté Garlic – Heat olive oil in a pot and sauté garlic until fragrant.
- Step 2: Cook Chicken – Add diced chicken and cook until lightly golden.
- Step 3: Add Tomatoes and Broth – Stir in sun-dried tomatoes and seasoning, then pour in broth.
- Step 4: Simmer Soup – Simmer for 15 minutes before reducing heat.
- Step 5: Add Cream and Cheese – Add cream and Parmesan; stir until melted.
- Step 6: Add Spinach and Serve – Add spinach, simmer 2 minutes, then serve warm.
Notes
You can substitute kale for spinach, or omit greens entirely.
