Ingredients

- 12 oz penne pasta
- 2 tbsp olive oil
- 3 bell peppers (red, yellow, green), sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 cup heavy cream or coconut milk
- ½ cup parmesan cheese
- 1 tsp jerk seasoning
- Salt & pepper to taste
- 2 chicken breasts or shrimp (optional)
Instructions
- Step 1: Cook pasta until al dente, reserve pasta water.
- Step 2: Season and cook chicken/shrimp (if using), set aside.
- Step 3: Sauté peppers, onion, and garlic in olive oil.
- Step 4: Add jerk seasoning, cream, and parmesan. Simmer.
- Step 5: Toss pasta in sauce, add reserved pasta water.
- Step 6: Mix in protein, garnish with herbs, and serve.
Notes
- Substitute coconut milk for a dairy-free version.
- Adjust jerk seasoning for spice preference.
- Works with shrimp, tofu, or vegetarian only.
