- 1/2 cup brown sugar
- 2 tbsp cinnamon
- 3 tbsp softened butter
Instructions
- Step 1: Feed starter 6–8 hours before baking.
- Step 2: Mix starter, water, and flour; rest 30 mins.
- Step 3: Add salt, fold in cinnamon sugar.
- Step 4: Bulk ferment 4–6 hours, folding every 45 mins.
- Step 5: Shape with remaining cinnamon sugar swirl.
- Step 6: Cold proof 8–12 hours.
- Step 7: Bake at 425°F for 15 mins with steam, then 375°F for 30–35 mins.
- Step 8: Cool before slicing.
Notes
Adjust cinnamon sugar to taste; add raisins or nuts for variety.
