- 2 cups all-purpose flour

- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs, lightly beaten
- 1 teaspoon vanilla extract
- 3 very ripe medium bananas, mashed
- 1/2 cup chopped walnuts or pecans
Instructions
- Step 1: Prepare Oven & Pan – Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- Step 2: Combine Dry Ingredients – In a medium bowl, whisk together flour, baking soda, and salt.
- Step 3: Cream Butter & Sugar – In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
- Step 4: Add Wet Ingredients – Beat in eggs one at a time, then stir in vanilla extract and mashed bananas until just combined.
- Step 5: Mix Wet & Dry – Gradually add the dry ingredients to the wet ingredients, mixing until just moistened. Do not overmix.
- Step 6: Fold in Nuts – Gently fold in the chopped walnuts or pecans.
- Step 7: Pour into Pan – Pour the batter into the prepared loaf pan and spread evenly.
- Step 8: Bake Bread – Bake for 55-65 minutes, or until a wooden skewer inserted into the center comes out clean.
- Step 9: Cool & Serve – Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and serve.
Notes
For the best flavor and texture, ensure your bananas are very ripe with plenty of brown spots. Overmixing the batter can lead to a tough loaf.
