Instructions
- Step 1: Create Marinade – In a large bowl, whisk together Greek yogurt, olive oil, lemon juice, garlic, and all spices.
- Step 2: Marinate Chicken – Add chicken thighs to the bowl, coating thoroughly, and refrigerate for at least 2 hours.
- Step 3: Prepare Pan – Heat a large cast-iron skillet or grill pan over medium-high heat with a drizzle of oil.
- Step 4: Sear Chicken – Place chicken in the pan and cook for 6-8 minutes per side until deeply charred and cooked through.
- Step 5: Rest Meat – Transfer the cooked chicken to a cutting board and let it rest for 5 minutes to retain juices.
- Step 6: Slice Chicken – Cut the chicken into thin, bite-sized strips against the grain to mimic rotisserie meat.
- Step 7: Warm Pitas – Briefly toast pita breads in a dry skillet until they are soft and flexible.
- Step 8: Assemble Gyros – Spread tzatziki on pita, add chicken strips, onions, tomatoes, and parsley before folding.
Notes
For the most authentic flavor, allow the chicken to marinate overnight. Using chicken thighs instead of breasts ensures the meat remains juicy during the high-heat searing process.
