Ingredients
Scale
- 1.5 lbs boneless skinless chicken thighs, chopped into bite-sized pieces
- 2 tablespoons chipotle peppers in adobo sauce, finely minced
- 1/3 cup high-quality honey
- 2 cloves garlic, minced
- 1 tablespoon fresh lime juice
- 1 tablespoon olive oil
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon kosher salt
- 1/4 teaspoon cracked black pepper
Instructions
- Step 1: Prepare Marinade – In a small bowl, whisk together the chipotle peppers, honey, minced garlic, lime juice, and smoked paprika until smooth.
- Step 2: Season Chicken – Pat the chicken pieces dry and season them evenly with the salt and black pepper.
- Step 3: Coat Meat – Toss the chicken in a bowl with half of the prepared honey chipotle mixture, reserving the rest for later.
- Step 4: Heat Skillet – Place a large skillet over medium-high heat and add the olive oil.
- Step 5: Sear Chicken – Add the chicken to the hot pan in a single layer and cook for 5-7 minutes until golden brown on all sides.
- Step 6: Add Glaze – Pour the remaining reserved sauce over the chicken and reduce the heat to medium.
- Step 7: Caramelize – Continue cooking for 3-4 minutes, stirring constantly until the sauce thickens into a sticky glaze that clings to the meat.
- Step 8: Serve – Remove from heat and serve immediately over rice, in tacos, or atop a fresh garden salad.
Notes
For maximum flavor, let the chicken marinate for at least 30 minutes before cooking. Leftovers are excellent for meal prep as the smoky flavor deepens over time.
