Ingredients
Scale
- 1 1/2 cups all-purpose flour
- 1/2 cup high-quality unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon espresso powder
- 1/2 cup vegetable oil
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 2 cups shredded zucchini (do not drain)
- 1 cup semi-sweet chocolate chips
Instructions
- Step 1: Prep Oven – Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan thoroughly.
- Step 2: Whisk Dry – In a medium bowl, whisk together flour, cocoa powder, baking soda, baking powder, salt, and espresso powder.
- Step 3: Combine Wet – In a large bowl, beat the eggs, granulated sugar, brown sugar, oil, and vanilla extract until smooth.
- Step 4: Fold Zucchini – Stir the shredded zucchini into the wet ingredients until evenly distributed.
- Step 5: Mix Batter – Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Step 6: Add Chocolate – Fold in the chocolate chips, ensuring they are distributed throughout the thick batter.
- Step 7: Bake Loaf – Pour batter into the prepared pan and bake for 55 to 65 minutes until a tester comes out clean.
- Step 8: Cool Bread – Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
Do not peel the zucchini; the skin provides structure and disappears during the baking process. Espresso powder enhances the chocolate flavor without adding a coffee taste.
