Instructions
- Step 1: Combine Base – Add the cottage cheese, sweetener, vanilla extract, and salt into a high-speed blender or food processor.
- Step 2: Blend Smooth – Process on high for 60-90 seconds until the mixture is completely smooth and no curds remain.
- Step 3: Add Mix – ins – Fold in the chopped strawberries and chocolate chips by hand using a spatula.
- Step 4: Prep Container – Pour the blended mixture into a shallow, freezer-safe container or the original cottage cheese tub.
- Step 5: Initial Freeze – Place the container in the freezer for approximately 2 to 3 hours.
- Step 6: Stir Frequently – Every 30-45 minutes, stir the mixture with a fork to break up ice crystals and maintain a creamy texture.
- Step 7: Final Soften – Remove from the freezer 5-10 minutes before serving to allow it to soften slightly for easier scooping.
Notes
For the creamiest results, use full-fat cottage cheese. If the ice cream freezes too hard, simply blend it again briefly before serving.
