- 1 teaspoon fresh lemon juice
- 1/2 teaspoon grated fresh ginger (optional)
Instructions
- Step 1: Bloom Gelatin – Pour the cold water into a small bowl and sprinkle the gelatin evenly over the surface; let sit for 5 minutes.
- Step 2: Warm Juice – Heat the tart cherry juice in a small saucepan over medium heat until it begins to steam, avoiding a full boil.
- Step 3: Dissolve Gelatin – Add the bloomed gelatin to the warm juice and whisk continuously until the mixture is completely smooth and clear.
- Step 4: Add Sweetener – Remove the pan from heat and stir in the honey, lemon juice, and ginger until fully incorporated.
- Step 5: Prepare Dish – Lightly grease a glass baking dish or prepare silicone molds for easy removal.
- Step 6: Pour Mixture – Carefully pour the liquid gelatin mixture into your chosen dish or molds.
- Step 7: Set – Refrigerate the mixture for at least 3 hours or until the gelatin is firm to the touch.
- Step 8: Slice and Serve – Cut into small squares and store in an airtight container in the refrigerator for up to one week.
