Ingredients
Scale
- 8 oz Whole wheat, lentil, or chickpea pasta
- 2 cups assorted seasonal vegetables (zucchini, broccoli, kale, or bell peppers)
- 2 tbsp high-quality olive oil
- 3 cloves garlic, minced
- 1/2 cup protein (chickpeas, walnuts, or Greek yogurt)
- 1 lemon, zested and juiced
- 1/4 cup vegetable broth
- Fresh herbs (basil, parsley) and red pepper flakes to taste
- 1/4 cup reserved pasta cooking water
Instructions
- Step 1: Boil Water – Bring a large pot of salted water to a rolling boil before adding your pasta.
- Step 2: Prepare Aromatics – While the noodles cook, sauté your garlic, onions, or shallots in a pan with a splash of olive oil until fragrant.
- Step 3: Add Vegetables – Toss in your chopped vegetables, such as spinach, mushrooms, or peppers, cooking until they reach your preferred tenderness.
- Step 4: Combine – Reserve a small amount of the starchy cooking water (about 1/4 cup), then drain the noodles and add them directly into the skillet.
- Step 5: Emulsify – Pour in the reserved water along with your choice of sauce or fresh herbs, tossing everything together until the ingredients cling to the noodles.
Notes
Store pasta and sauce in separate containers to prevent noodles from becoming mushy. Reheat gently with a splash of water.
