Eggplant Parmesan: A Crispy, Saucy Classic Everyone Loves

A comforting baked eggplant parmesan with crisp breaded eggplant, rich tomato sauce, and melted cheese. This classic meatless casserole is hearty, satisfying, and perfect for family dinners or make-ahead meals.

  • Total Time: 1 hour 15 minutes
  • Yield: 6 servings 1x

Ingredients

Scale
  • 2 medium eggplants, sliced into 1/2-inch rounds
  • 1 1/2 teaspoons salt
  • 2 cups all-purpose flour
  • 4 large eggs, beaten
  • 3 cups Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon black pepper
  • 3 cups marinara or tomato sauce
  • 3 cups shredded mozzarella cheese
  • 2 tablespoons olive oil, for frying or brushing
  • 1/4 cup fresh basil, chopped
  • 1/2 cup extra grated Parmesan, for topping

Instructions

  1. Step 1: Prep the Eggplant – Sprinkle eggplant slices with salt and let sit for 20-30 minutes to draw out moisture, then pat dry.
  2. Step 2: Set Up Breading Station – Place flour in one bowl, beaten eggs in another, and mix breadcrumbs with Parmesan and black pepper in a third.
  3. Step 3: Bread the Slices – Dredge each eggplant slice in flour, dip in egg, then coat thoroughly with the breadcrumb mixture.
  4. Step 4: Cook Until Golden – Pan-fry in olive oil or bake at 425°F until crisp and lightly browned on both sides.
  5. Step 5: Layer the Casserole – Spread a thin layer of sauce in a baking dish, then add eggplant, more sauce, mozzarella, and Parmesan. Repeat layers as needed.
  6. Step 6: Bake Until Bubbling – Bake at 375°F for 25-30 minutes until the cheese is melted and the sauce is bubbling.
  7. Step 7: Rest and Serve – Let the eggplant parmesan rest for 10 minutes, then garnish with basil and serve warm.

Notes

For a lighter version, bake the breaded eggplant instead of frying. Use a thick marinara sauce so the casserole does not become watery. Eggplant parmesan can be assembled ahead and baked later.
