Ingredients
Scale
- 12 oz wide egg noodles
- 1 cup fresh flat-leaf parsley
- 1 cup fresh basil
- 1/2 cup fresh chives
- 2 cups baby spinach
- 2 cloves garlic
- 1 tsp lemon zest
- 16 oz cottage cheese
- 8 oz sour cream
- 4 large eggs
- 1/2 cup melted butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup breadcrumbs or parmesan cheese for topping
Instructions
- Step 1: Prep and Preheat – Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius) and generously grease a 9×13-inch baking dish with butter or cooking oil.
- Step 2: Boil the Noodles – Bring a large pot of salted water to a boil, add wide egg noodles, and cook until just al dente according to package instructions, then drain thoroughly.
- Step 3: Blend the Herb Mixture – In a food processor, combine fresh parsley, basil, chives, baby spinach, garlic cloves, and lemon zest, pulsing until finely chopped and vibrant green.
- Step 4: Mix the Custard – In a large mixing bowl, whisk together eggs, cottage cheese, sour cream, melted butter, salt, and black pepper until smooth and well combined.
- Step 5: Combine Everything – Stir the vibrant green herb purée into the dairy custard, then gently fold in the cooked egg noodles until every strand is coated.
- Step 6: Transfer and Top – Pour the green goddess kugel mixture into your prepared baking dish, smoothing the top and optionally sprinkling breadcrumbs or parmesan cheese for extra crunch.
- Step 7: Bake to Golden Perfection – Bake uncovered for 45 to 50 minutes until the edges are bubbling, the center is set, and the top develops a golden-brown crust.
Notes
Leftover kugel can be stored in an airtight container in the refrigerator for up to four days. Reheat in an oven or toaster oven to maintain the crispy top.
