Ingredients

Scale
  • 2 salmon fillets (6 oz each)
  • 1 bunch thin asparagus, woody ends trimmed
  • 1/2 cup uncooked quinoa
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 fresh lemon, halved
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon cracked black pepper
  • 1/2 teaspoon dried oregano

Instructions

  1. Step 1: Preheat Oven – Heat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Step 2: Prepare Quinoa – Rinse quinoa under cold water, then combine with 1 cup water in a small pot and bring to a boil.
  3. Step 3: Simmer Quinoa – Reduce heat to low, cover, and simmer for 15 minutes until water is absorbed.
  4. Step 4: Season Vegetables – Place asparagus on the prepared baking sheet and toss with 1 tablespoon olive oil, salt, and pepper.

  6. Step 6: Add Lemon – Place thin lemon slices over the salmon and asparagus for extra zest and moisture.
  7. Step 7: Roast – Bake for 12 to 15 minutes until the salmon flakes easily with a fork and asparagus is tender.
  8. Step 8: Final Assembly – Fluff quinoa with a fork, plate the salmon and asparagus, and garnish with fresh parsley.

Notes

To add a bit of crunch, you can sprinkle toasted sliced almonds over the asparagus before serving.
