Ingredients
Scale
- 2 cups zucchini, chopped
- 1 red bell pepper, chopped
- 1 cup cherry tomatoes
- 1 tablespoon extra virgin olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Sea salt and black pepper to taste
- 8 ounces chickpea or whole-wheat pasta
- 2 cloves garlic, minced
- 1 handful fresh baby spinach
- 1/4 cup grated parmesan cheese or nutritional yeast
- Fresh basil leaves for garnish
- Fresh lemon juice
Instructions
- Step 1: Prep the Roasted Vegetable Tomato Blend – Preheat your oven to 400 degrees Fahrenheit, toss the zucchini, red bell pepper, and cherry tomatoes in olive oil, oregano, garlic powder, salt, and pepper, and roast for 20 minutes.
- Step 2: Boil the High – Fiber Noodle Base – Bring a large pot of salted water to a rolling boil, add the pasta, cook al dente according to package directions, and reserve 1/2 cup of starchy pasta water before draining.
- Step 3: Combine and Emulsify the Sauce – Place a large skillet over medium-low heat, add the roasted vegetables, minced garlic, baby spinach, drained pasta, and reserved pasta water, tossing continuously until the spinach wilts and forms a light glossy sauce.
- Step 4: Plate and Finish with Fresh Herbs – Divide the warm mixture evenly across four shallow bowls, top each serving with parmesan cheese, fresh basil leaves, and a squeeze of fresh lemon juice, and serve immediately.
Notes
Ensure you save starchy pasta water to easily bind the sauce without needing heavy cream or butter.
