- 1 cup Cold Water
- 3 cups Boiling Water
- 1/4 cup Fresh Lemon Juice
- 2 tbsp Stevia or Monk Fruit sweetener
- 1/2 tsp Vanilla Extract
- Pinch of sea salt
Instructions
- Step 1: Bloom Gelatin – Sprinkle the unflavored gelatin over 1 cup of cold water in a large heat-proof bowl and let it sit for 5 minutes to bloom.
- Step 2: Dissolve Gelatin – Pour the 3 cups of boiling water over the bloomed gelatin and stir continuously for 2 minutes until completely dissolved.
- Step 3: Sweeten and Flavor – Add the sweetener, lemon juice, vanilla extract, and salt, whisking until the sweetener is fully integrated.
- Step 4: Set the Mold – Carefully pour the mixture into a shallow glass dish or individual serving ramekins.
- Step 5: Refrigerate – Place in the refrigerator for at least 4 hours, or until the jello is firm and set.
- Step 6: Portion and Serve – Slice into squares or serve directly from ramekins as a high-volume, low-calorie snack.
Notes
