Ingredients
Scale
- 1.5 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 2 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 1.5 cups grated fresh zucchini
- 1/2 cup powdered sugar (for glaze)
- 1 tablespoon lemon juice (for glaze)
Instructions
- Step 1: Prep Oven – Preheat your oven to 350°F (175°C) and grease a standard 9×5 inch loaf pan.
- Step 2: Mix Dry Ingredients – In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
- Step 3: Blend Wet Ingredients – In a separate large bowl, beat the sugar, oil, eggs, lemon juice, and lemon zest until well combined.
- Step 4: Add Zucchini – Stir the grated zucchini into the wet mixture, ensuring it is evenly distributed throughout.
- Step 5: Combine Batter – Gradually fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
- Step 6: Bake Bread – Pour the batter into the prepared loaf pan and bake for 50 to 60 minutes or until a toothpick comes out clean.
- Step 7: Cool Loaf – Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Step 8: Glaze and Serve – Whisk the powdered sugar and extra lemon juice together, drizzle over the cooled loaf, and slice to serve.
Notes
Do not squeeze the water out of the zucchini; the natural moisture is what makes this bread so tender. You can add poppy seeds for extra texture.
