Ingredients
- Fresh poblano peppers
- Garlic cloves
- Sour cream or heavy crema
- Fresh lime juice
- Fresh cilantro
- Salt
- Pinch of cumin
- Whole milk or extra lime juice (optional, for thinning)
- Single fresh jalapeño pepper (optional, for extra heat)
Instructions
- Step 1: Roast Peppers – Place your poblano peppers under a broiler or directly over a gas flame until the outer skin turns entirely black and blistered on all sides.
- Step 2: Steam and Peel – Transfer the hot roasted peppers to a bowl, cover it tightly with plastic wrap for ten minutes to trap the steam, then gently rub away the charred skin and remove the seeds.
- Step 3: Blend the Base – Combine the peeled poblanos, peeled garlic cloves, fresh cilantro, lime juice, salt, and cumin in a food processor or high-powered blender until completely smooth.
- Step 4: Fold in Cream – Pour the bright green pepper puree into a bowl and gently fold in your sour cream or Mexican crema until thoroughly combined and velvety.
- Step 5: Chill and Serve – Cover your freshly made sauce and let it rest in the refrigerator for at least thirty minutes so the flavors can meld together nicely before serving.
Notes
