Ingredients
Scale
- 2 large poblano peppers
- 1 cup full-fat sour cream
- 2 tablespoons vegetable oil
- 1 tablespoon fresh lime juice
- 1 clove garlic, minced
- 1/2 teaspoon kosher salt
- 1 tablespoon water (optional for thinning)
Instructions
- Step 1: Roast Peppers – Place poblano peppers under a broiler or over an open gas flame until the skin is charred and blistered on all sides.
- Step 2: Steam Peppers – Transfer the charred peppers to a bowl and cover tightly with plastic wrap for 10 minutes to loosen the skins.
- Step 3: Clean Peppers – Peel away the charred skin, then remove the stems, seeds, and internal membranes.
- Step 4: Combine Ingredients – Place the roasted pepper flesh, sour cream, oil, lime juice, garlic, and salt into a high-speed blender.
- Step 5: Blend Sauce – Process the mixture until completely smooth and velvety, ensuring small flecks of charred pepper remain for a rustic look.
- Step 6: Adjust Consistency – Check the thickness and add a tablespoon of water or extra lime juice if a thinner, drizzlable consistency is desired.
- Step 7: Chill Crema – Refrigerate the sauce for at least 30 minutes to allow the roasted flavors to meld with the cream base before serving.
Notes
Store in an airtight container in the refrigerator for up to 5 days. The flavor deepens after the first 24 hours.
