Ingredients
- 1 cup (226g) unsalted butter, softened
- 1 cup (200g) packed light brown sugar
- 1/2 cup (100g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 3 cups (270g) old-fashioned rolled oats
- 1 1/2 cups (250g) raisins, soaked in warm water and drained
Instructions
- Step 1: Prep Raisins – Soak raisins in warm water for 5 minutes, then drain well.
- Step 2: Cream Wet Ingredients – Beat softened butter with both sugars until light and fluffy. Mix in eggs one at a time, then vanilla extract.
- Step 3: Combine Dry Ingredients – In a separate bowl, whisk together the flour, baking soda, ground cinnamon, and salt.
- Step 4: Mix Dough – Gradually add the dry ingredients to the wet ingredients, mixing until just combined and no streaks of flour remain.
- Step 5: Fold in Oats & Raisins – Stir in the old-fashioned rolled oats and the drained, plumped raisins.
- Step 6: Preheat Oven – Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
- Step 7: Scoop & Bake – Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are golden brown and the centers are set.
- Step 8: Cool Cookies – Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Achieving a chewy texture relies on moisture control, using a higher ratio of brown sugar for its molasses content, and soaking raisins to keep them plump. Old-fashioned rolled oats are preferred for their sturdy bite, avoiding the cake-like texture of quick oats. Baking soda aids browning and lift, while salt balances sweetness and highlights oat flavor.
