- Poblano peppers
- Garlic cloves
- Fresh cilantro leaves
- Fresh lime juice
- Sour cream or Mexican crema
- Milk (optional, for thinning)
- Coarse sea salt
- Black pepper
- Ground cumin
Instructions
- Step 1: Roast and Peel – Roast your poblano peppers until charred all over, steam them in a covered container for ten minutes, then gently peel away the blackened skin and discard the stems and seeds.
- Step 2: Blend the Aromatics – Place the peeled peppers, peeled garlic cloves, fresh cilantro leaves, and fresh lime juice into a high-powered food processor or blender.
- Step 3: Add the Creamy Base – Add your sour cream or Mexican crema to the blender along with a pinch of salt and ground cumin to build the rich body of the sauce.
- Step 4: Purée Until Smooth – Pulse and blend the mixture on high speed until completely smooth and velvety, checking the thickness and adding a splash of milk if needed.
- Step 5: Chill and Serve – Transfer the finished sauce to a jar or airtight container and let it rest in the refrigerator for at least thirty minutes before serving to let the flavors meld.
