- 1 tbsp Sugar-free Maple Syrup or Monk Fruit sweetener
- 1 tsp Vanilla Extract
- Pinch of sea salt
- 1/4 cup Frozen Strawberries or Blueberries (optional)
Instructions
- Step 1: Combine Ingredients – Place the protein powder, almond milk, cottage cheese, xanthan gum, sweetener, vanilla, and salt into a high-powered blender.
- Step 2: Blend Mixture – Process on high for 60-90 seconds until the mixture is completely smooth and starts to aerate.
- Step 3: Transfer Container – Pour the liquid base into a freezer-safe pint container or a shallow bowl.
- Step 4: Initial Freeze – Place in the freezer for approximately 2 hours until the edges begin to set.
- Step 5: Re – blend – For maximum creaminess, briefly blend the semi-frozen mixture again or whisk vigorously to break up ice crystals.
- Step 6: Final Freeze – Return to the freezer for another 4-6 hours or until solid.
- Step 7: Temper Ice Cream – Remove from the freezer and let it sit at room temperature for 10 minutes before scooping to achieve a soft-serve texture.
- Step 8: Serve – Scoop into a bowl and add your favorite healthy toppings like nuts or fresh fruit.
Notes
Using Casein protein or a Whey/Casein blend often results in a thicker, creamier texture than 100% Whey. Ensure the xanthan gum is fresh for the best thickening results.
