- 12 corn tortillas

Instructions
- Step 1: Prepare Marinade – In a large bowl, whisk together lime juice, orange juice, minced garlic, olive oil, cumin, oregano, chili powder, salt, and pepper until well combined.
- Step 2: Marinate Chicken – Add the chicken pieces to the marinade, ensuring each piece is fully coated. Cover the bowl and refrigerate for at least 30 minutes, or for up to 4 hours for optimal flavor development.
- Step 3: Preheat Grill – Preheat your outdoor grill to medium-high heat (around 400°F or 200°C). Lightly oil the grill grates to prevent sticking.
- Step 4: Grill Chicken – Place the marinated chicken on the hot grill. Cook for 5-7 minutes per side, or until the chicken reaches an internal temperature of 165°F (74°C) and has beautiful char marks.
- Step 5: Rest and Slice – Remove the cooked chicken from the grill and transfer it to a cutting board. Let it rest for 5 minutes before slicing against the grain into bite-sized pieces.
- Step 6: Warm Tortillas – While the chicken rests, warm the corn tortillas. You can do this directly on the grill for 30 seconds per side, in a dry skillet over medium heat, or briefly in the microwave until they are pliable and warm.
- Step 7: Assemble Tacos – Fill each warm tortilla with a generous portion of the sliced pollo asado. Top with diced white onion, fresh cilantro, and a dollop of your favorite salsa. Serve immediately.
Notes
For an extra layer of flavor and a slight smoky heat, consider adding a pinch of smoked paprika or a tiny bit of cayenne pepper to the marinade. A final squeeze of fresh lime juice over the assembled tacos brightens all the flavors.
