High-Protein Fruit Gelatin Snacks

A refreshing, low-calorie snack that utilizes the thermic effect of protein in unflavored gelatin to help you feel full while supporting your weight loss goals.

  • Total Time: 4 hours 15 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 2 envelopes (approx. 14g) unflavored gelatin powder
  • 1/2 cup cold water
  • 1 1/2 cups 100% tart cherry or pomegranate juice (no added sugar)
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon liquid stevia or monk fruit sweetener (optional)
  • Fresh berries for garnish

Instructions

  1. Step 1: Bloom Gelatin – Pour the cold water into a medium bowl and sprinkle the unflavored gelatin evenly over the surface.
  2. Step 2: Hydrate – Let the gelatin sit for about 5 to 10 minutes until it becomes thick and applesauce-like in consistency.
  3. Step 3: Heat Juice – In a small saucepan, bring the fruit juice to a light simmer over medium heat, but do not let it boil.
  4. Step 4: Dissolve Mixture – Carefully pour the hot juice over the bloomed gelatin and whisk continuously until the powder is fully dissolved.
  5. Step 5: Add Flavor – Stir in the lemon juice and your preferred natural sweetener if you desire a sweeter treat.
  6. Step 6: Portion – Pour the liquid mixture into a 8×8 inch glass baking dish or individual silicone snack molds.
  7. Step 7: Chill – Refrigerate the gelatin for at least 3 to 4 hours until the mixture is completely firm and set.
  8. Step 8: Slice – Cut the set gelatin into small squares and store in an airtight container in the fridge.

Notes

Using tart cherry juice adds antioxidants that help with muscle recovery after workouts. Ensure the juice has no added sugars to maximize weight loss benefits.
