- 1/2 cup Fresh Parsley, chopped
- 50g Parmesan Cheese, grated
- Salt and Black Pepper to taste
- 1/2 cup Reserved Pasta Water
Instructions
- Step 1: Boil Pasta – Cook the pasta in a large pot of salted boiling water until al dente.
- Step 2: Prepare Aromatics – While pasta cooks, heat olive oil in a large skillet over medium heat and sauté minced garlic until fragrant.
- Step 3: Bloom Harissa – Add the harissa paste to the skillet and stir for 1-2 minutes to release its smoky oils and aromas.
- Step 4: Simmer Sauce – Pour in the heavy cream and stir continuously until the sauce turns a vibrant deep red and begins to simmer.
- Step 5: Emulsify Sauce – Add a splash of the reserved pasta water to the sauce to reach your desired consistency.
- Step 6: Incorporate Pasta – Toss the cooked pasta directly into the sauce, coating every piece thoroughly.
- Step 7: Season Dish – Add lemon juice, zest, and grated parmesan, then toss again to combine.
- Step 8: Garnish and Serve – Season with salt and pepper to taste and top with fresh parsley before serving.
Notes
Adjust the heat level by choosing a mild or spicy harissa brand. Always taste the sauce before adding salt, as harissa can be quite salty.
