- 500g cherry tomatoes

- 3 tablespoons extra virgin olive oil
- 1/2 cup reserved pasta water
- Salt and black pepper to taste
- Fresh basil or parsley for garnish
- Optional: Grated parmesan cheese
Instructions
- Step 1: Boil Water – Bring a large pot of heavily salted water to a rolling boil.
- Step 2: Cook Pasta – Add the pasta and cook according to package directions until al dente.
- Step 3: Heat Oil – Warm the olive oil in a large skillet over medium-high heat.
- Step 4: Sauté Aromatics – Add the sliced garlic and harissa paste, frying for 2 minutes until fragrant.
- Step 5: Burst Tomatoes – Add cherry tomatoes to the skillet and cook until they soften and burst.
- Step 6: Emulsify Sauce – Pour in a splash of pasta water and stir to create a glossy sauce.
- Step 7: Combine Dish – Toss the cooked pasta into the skillet, coating every strand in the harissa sauce.
- Step 8: Garnish – Season with salt and pepper, then top with fresh herbs and optional cheese.
Notes
Reserve more pasta water than you think you need to ensure the sauce reaches a silky consistency.
