Instructions
- Step 1: Prep Ingredients – Wash the cilantro thoroughly and remove the stems from the green chilies.
- Step 2: Combine Solids – Place the cilantro, chilies, garlic, cumin, cardamom, and salt into a food processor.
- Step 3: Pulse Mixture – Pulse the ingredients until they form a coarse, chunky paste, ensuring it remains rustic.
- Step 4: Incorporate Oil – Slowly drizzle in the olive oil and lemon juice while pulsing until the ingredients are well combined.
- Step 5: Adjust Seasoning – Taste the sauce and add more salt or a pinch more cumin if desired for depth.
- Step 6: Store Sauce – Transfer the zhoug to a glass jar and cover with a thin layer of oil to preserve the color.

For a truly authentic texture, use a mortar and pestle to grind the herbs and spices by hand.
